1 - Some site refer to senior citizen discounts. What age constitutes senior citizenry? :) 
2 - We'll be staying at Castleknock Hotel in March. What's the cheapest and easiest way to get to city centre from there?

Senior Citizens would probably usually mean age 60+, but in some cases, if it is for a discount, it could be at the discretion of the management. Sometimes, it's 55+. 
Castleknock Hotel is about two miles from Castleknock Village (quite a nice location), but there is not much public transport immediately nearby. The EASIEST way to get to the city centre from there is taxi. (Maybe +/-€20?) (The hotel would call one for you).  
The CHEAPEST way would be to get a bus. You would need to walk about half a mile to a bus stop (37 route) and the trip would take about 45-60 mins depending on time of day. (Fare approx €3 each?)
