Similarly, the Spanish-style asador grill is a char-flame smokehouse, located in the upstairs garden terrace in full view of guests, whose charcoals and embers produce a distinctive charred flavour, which lends itself perfectly to the finest quality 31 day dry-aged Irish beef.
The meat and produce used at Cathedral is entirely freshly sourced from local artisan suppliers and is fully traceable. Also supporting all things Irish are the hand carved hardwood boards used to serve the Sunday Roasts on. Produced by a small family business in Tralee, County Kerry, the wood is taken from mature hardwood trees which are roughly 100 years old and have either fallen naturally or been taken down for safety reasons.
