The seasonal menu is shaped by talented young head chef Stephen Forbes, who is as comfortable brewing a wild consommé with truffle foam as cooking fish just hours out of the cold Atlantic with simple clarified butter. Fish and seafood are sourced from nearby Greencastle and vegetables are also locally sourced, while the 28 day aged steaks are from Castlerock. Their fine wines are from award-winning McAlindon’s wine merchant in Belfast.
