The kitchen is directed by leading Irish Chef Niall O’Sullivan, who prior to joining East Side Tavern worked in a number of Dublin restaurants, including the Cavistons Group, before becoming head chef at Dalis in Blackrock. Fermenting, foraging and sourcing excellent produce are all part of Niall’s repertoire and his travels around the world have imparted a fresh style and taste to the city’s food scene
